Quinoa is by its nature gluten-free, high in energy and a source of complete protein. This grain-like crop has a light, fluffy texture and a mild, slightly nutty flavour when cooked. Quinoa can be used as an alternative to rice or couscous.
To Cook: Bring 1 cup of quinoa to the boil with 2 cups of water or stock. Cover and simmer for 14-18 minutes.
