Buckwheat is not a grain but a seed, rich in amino acids, B vitamins, manganese, copper, magnesium, phosphorus, potassium, iron and zinc. It contains soluble fibre, which slows the rate of absorption of glucose into the body, and resistant starch, which has been shown to lower blood sugar levels.
Sesame Seeds are not only rich in minerals - copper, magnesium, calcium, phosphorus, iron, zinc, molybdenum and selenium - but also contain two unique lignins - sesamin and sesamolin - which have anti-oxidant properties.
Flax Seeds contain high levels of protein, dietary fibre and B vitamins. They are rich in omega-3, omega-6 (linoleic acid) and omega-9 (oleic acid) fatty acids, and have been shown to reduce total LDL-cholesterol levels.
Sunflower Seeds are a rich source of protein, dietary fibre, many B vitamins, vitamin E and dietary minerals, including magnesium, manganese, phosphorus, iron and zinc. They also contain phytosterols which may contribute towards lower levels of cholesterol.
